Laura Klotz, RD, LDN, is available for complimentary consultations on topics such as:
- Food allergies, celiac disease, or other special dietary needs
- Eating healthy on campus
- Vegan and vegetarian dining
She has a passion for leading a healthy lifestyle and empowering people of all ages to reach their healthiest potential through food and nutrition. She works with students, faculty and staff to encourage a healthy lifestyle. She also assists students on campus that have dietary restrictions, helping them become more comfortable in their new dining environment.
The dining team works to create healthy food options across campus and is available to assist students in making sustainable changes to their diet that fit their lifestyle.

Kraft Mozzarella Cheese Stick
Satisfy your cheese craving with the right sized portion. At only 80 calories each, Kraft’s Part Skim Mozzarella Cheese Sticks are full of bone strengthening calcium. Students with special dietary needs are expected to communicate their dietary restrictions and requirements to the FSU Dining Team. We take pride in serving you wholesome ingredients, preparing recipes accurately, and providing nutritional analysis and ingredient statements through our online menus. From our general manager to our front line servers, we work carefully to address food allergies, intolerances, and other special dietary needs.

Allergen Friendly Dining at FSU
Simple Servings is our resident dining option, providing safe and appetizing food choices for our customers with food allergies or gluten intolerance. The Simple Servings station will not offer foods made with the FDA’s most-common allergens of peanuts, tree nuts, shellfish, wheat, soy, milk products, and egg. Simple Servings is open seven days a week for lunch and dinner.
Mindful is our health and wellness approach that helps you make healthy choices second nature! Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. McCarthy Dining Commons is now certified Mindful Gold. Half of the beverages offered are less than 40 calories per serving. More than half of the items on our menu meet the Mindful criteria, and every station offers something Mindful. Healthy does taste great! Just look for the Mindful apple icon to find healthy and delicious menu items offered at each meal.
My Zone is an allergen aware area of the McCarthy Dining Commons designed to offer food products that are gluten, peanut, and tree nut free. The My Zone pantry is a self-serve area within the dining hall consisting of a stocked refrigerator as well as a designated microwave and toaster. This station is open for breakfast, lunch and dinner. Additionally, hot entrees are available for lunch and dinner on the My Zone hot station.
