Food Allergies and Dietary Accommodations at Framingham State University

 

The Dining Services Dietitian will work with students to provide reasonable accommodations.  Accommodations may include alternate meals or menu choices that will be provided for students who have seen a health care provider and have been formally diagnosed with a condition requiring dietary accommodations.

 

How do I get started?

·        Contact the Dining Services Dietitian, Carolyn Holland at cholland@framingham.edu or 508-626-4602, and include as much information as possible regarding your dietary needs.

·        Set-up a meeting with the Dining Services Dietitian to discuss your needs in detail and to tour the Dining Commons.

·        After all information has been reviewed by Dining Services, a confirmation e-mail will be sent to the student highlighting the discussion and what accommodations will be provided to the student.

·        If however, students do not feel their dietary needs are able to be met, they may request a modification to the dining contract. Students should refer to the Dietary/Meal Plan Modification Policy and contact Disability/Access Services.

 

Role of the Student

It is the responsibility of the student to maintain communication with the Dining Services Dietitian and any other parties that are involved in the student’s case. Some dietary accommodations can be maintained independently while on campus, while others may require special meals to be produced to ensure the safety of the student.  

 

If the student is prescribed an epinephrine injector, they are solely responsible for its use.  Dining Services does not have epinephrine injectors available at any of its dining locations. The Dining Services staff is not trained and cannot administer or provide them. The student should alert friends, roommates, and/or resident assistant of their condition, educate them about the signs and symptoms of anaphylactic shock, and provide them with the steps to take if such an incident occurs. 

It is the mission of Framingham State University Dining Services to ensure an exceptional student dining experience.  It is our firm belief that special dietary needs should not exclude any student from this exceptional experience. Tips to ensure a safe dining experience at Framingham State University:

·        Know the severity of your symptoms. 

·        Always carry your emergency medications when dining. Educate a friend or roommate you often dine with about the signs and symptoms of anaphylactic shock, and the steps they should take if such an incident occurs. The dining services staff cannot administer an epinephrine injection, and does not have one available at dining locations.

·        Introduce yourself to the Dining Services Team and let us know about your dietary restrictions. We are here to help you!

·        Neverguess about an item. If you are concerned that it may contain an allergen, ask us!

New this Fall! Simple Servings

Simple Servings is our new resident dining option, providing safe and appetizing food choices for our customers with food allergies or gluten intolerance.

 

The Simple Servings station will not offer foods made with the FDA’s most-common allergens of peanuts, tree nuts, shellfish, wheat, soy, milk products, and eggs.  All foods offered will be made without gluten-containing ingredients.   Fish dishes will be included in the varied menu options as a healthy protein choice, along with beef, pork, chicken, turkey, and vegetarian options.  The menu will change with every lunch and dinner. 

 

Our kitchen prepares many foods with gluten and the other listed allergens.  Simple Servings staff members are carefully trained to avoid cross-contamination of their menu items.  Although we take precautions, the possibility of cross-contact with other foods does exist.

 

While the Simple Servings program is designed to allow customers to have an easy way to avoid gluten and allergens, our chef and dietitian still want to meet all of our customers with special food needs.  Knowing about customer preferences and limitations allows us to plan our menu to best meet everyone’s needs.  Please introduce yourself to the Dining Services Dietitian, Carolyn Holland at cholland@framingham.edu

 

The Simple Servings program is located in McCarthy Dining Commons, running seven days a week during lunch and dinner weekdays and brunch to dinner on weekends.

My Zone which is an allergen aware zone designed to offer food products that are gluten free. My Zone is a self serve area within the dining hall consisting of a stocked refrigerator as well as a designated microwave and toaster. This area is labeled with signage to warn against cross contamination. This station is open for breakfast, lunch and dinner. Additionally, hot entrees are available for breakfast, lunch and dinner on the My Zone Hot Station. Please notify your dining managers with further questions regarding foods that are safe for you beyond these 2 designated stations.

In addition, manufacturers may change their product formulation or ingredients without our knowledge and product availability may fluctuate. While we make every effort to identify ingredients, we cannot assure against these substitutions or changes. It is ultimately YOUR responsibility to determine whether to question ingredients or eat selected foods. FSU Dining Services cannot guarantee the safety of students with life-threatening allergies.

My Zone

My ZoneMy Zone is our campus “pantry” located at _____________, where food items needed by students with Celiac disease or food allergies are stored and prepared with precautions against cross-contact. This special area is free of tree nut, peanut, and gluten-containing ingredients and products. My Zone gives students the ability to be involved in their own allergen-safe meal preparation. The Simple Servings station offers food free from common allergens: peanuts, tree nuts, shellfish, wheat, soy, milk products, and eggs.  All foods offered are also free from gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens. Separate equipment, storage areas, utensils and preparation areas minimize, but do not totally eliminate, the chances of gluten and allergens in our Simple Servings foods.
